DIY Creamy Kale Salad by Vegan Comfort's Chef Sabali

Whether you are entertaining, attending a cookout, or planning dinner for tonight, this simple Creamy Kale Salad recipe is exactly what will win over even the pickiest tummies. Not only is it completely addictive and delicious, but this recipe is super easy to whip up! Did I mention it’s also really good for you? Kale is an excellent choice for those who are seeking more nutrition from their diets. It’s rich in essential minerals, like manganese, calcium, and cooper, and high in vitamin A & K. Kale provides the necessary building blocks for good protein.This recipe also utilizes the good heart-healthy oils of avocados, which are naturally high in omega-6 fatty acids, potassium, and vitamin K.

Ingredients:

  • 1 bunch of organic Kale (curly, dino, or red variety)

  • 1/2 very ripe avocado

  • 3 to 4 garlic cloves

  • 1/2 fresh lemon (juiced)

  • Pinch of sea salt

  • Pinch of cayenne

  • 2 tablespoons of nutritional yeast

  • 1 1/2 teaspoons of red pepper flakes/crushed red peppers

  • Sprinkle of black pepper

  • Optional toppings: red onion slices, sesame seeds, jalapeno slices, or sun-dried tomatoes

Directions:

Thoroughly wash kale leaves. Remove stems from leaves, and save stems in a plastic bag for later usage (juicing or smoothies). Using a large bowl tear leaves into bite size pieces. Or chop leaves down into one inch strips. Scoop out avocados into chunks over the bed of kale. Add lemon juice. Now with thoroughly washed hands, mix and massage the avocado chunks over the kale. Kale should be well coated with the avocado and lemon juice. Sprinkle the remaining ingredients and mix well using hands or a spoon.

Serve immediately and enjoy!
